FALL HARVEST BAKE

Sheet pan bakes, aka “tray bakes” are super easy to throw together and my favorite way to enjoy meals when the weather gets chilly. This is also a great way to enjoy fresh, seasonal produce.

What you need:

  • Acorn squash

  • baby carrots

  • brussel sprouts

  • red onion

  • red peppers

  • Extra virgin olive oil

  • minced garlic

  • thyme

  • salt and pepper

  • nutmeg

  • dash of red pepper flakes

Toss the veggies with EVOO, minced garlic, thyme, S&P, nutmeg and dash of red pepper. No need for exact measurement, season to your liking. Bake at 400 degrees for 45 mins or until browned up! I add a protein on the side. Enjoy!
